Panda Express Orange Chicken

This is an amazing recipe!  It is a favorite at our house.  You will love it too!  You can use essential oils in this recipe and make it gluten free.

We serve this dish with Jasmine brown rice at our house.  To feed a family of five, I use four chicken breasts (cut up in small bits) and triple the orange chicken sauce ingredients.  (For less sauce, you can double it.)  I double the minced garlic, use turbinado sugar, and rice vinegar in place of rice wine.  To make this dish gluten free make sure to use gluten free soy sauce.  Instead of orange zest in the sauce, I add doTERRA wild orange essential oil.  I am generous with this oil.  (You can use several drops depending on how much orange flavor you want.)  Sometimes I substitute doTERRA ginger essential oil for the minced ginger in the recipe.  I use one to two drops of ginger essential oil.  (For milder chicken, try one drop.)

Creamy Chicken and Thyme (Gluten Free)

Creamy Chicken and Thyme (Gluten Free)
4 chicken breast halves
1 can (14.5 oz.) chicken broth, divided
1 Tbsp. cornstarch
1/2 cup sour cream
1/2 tsp. dried parsley flakes
salt and pepper
1/4 tsp. dill
doTERRA thyme essential oil
toothpick
1/2 tsp. onion powder
hot cooked noodles (I use Tinkyada gluten free noodles)

Place chicken breasts in a large skillet. Add 1/2 cup of the broth. Bring to a boil. Reduce heat, cover and simmer for 10 to 12 minutes or until juices run clear, turning once. Remove chicken from pan, keep warm. Add remaining broth to skillet and bring to a boil, reduce heat to low. In a small bowl, combine cornstarch and sour cream. Whisk into pan. Stir in other herbs/spices. When adding the thyme essential oil, place a clean toothpick into the essential oil bottle and then drag this toothpick through the sauce in the pan. Once is enough for our family, you may like to do it twice (use a clean toothpick each time). Simmer, uncovered, for 5 minutes or until slightly thickened. Place chicken over hot cooked noodles. Drizzle with sauce. Serves 4.

Gluten Free Lemon Ginger Muffins

I made these today, and they are YUMMY!!!

Gluten Free Lemon Ginger Muffins
1/3 cup butter, softened
1 cup turbinado sugar
4 egg whites
2 Tbsp. minced fresh ginger root
3 to 4 drops doTERRA lemon essential oil
2 cups Bob’s Red Mill gluten free flour
3/4 tsp. xanthan gum
1 tsp. soda
1 cup plain or vanilla yogurt

In a large mixing bowl, beat butter and sugar until crumbly. Add egg whites; beat well. Stir in ginger and lemon essential oil. Combine flour, xanthan gum, and soda; add to butter mixture alternately with yogurt. Coat muffin cups with spray (I used baking cups); fill 3/4 full. Bake at 375 degrees for 18 to 20 minutes. Yield: 1 dozen (16 for me).

This is an altered recipe from Taste of Home.  You can make it with regular flour (make sure to exclude the xanthan gum if using regular flour).
